Black Forest Fudge

Easy fudge like recipe features cream cheese, almond extract, chocolate, cherries, and macadamia nuts.
Ingredients -
8 ounces Cream Cheese, softened
4 cups confectioners' Sugar
1 teaspoon Almond Extract
12 ounces Baking Chocolate, melted
3/4 cup chopped Dried Pitted Cherries
3/4 cup chopped Macadamia Nuts
 
Preparation:

1. Add cream cheese, sugar, and almond extract to medium bowl.

2. Beat with hand mixer on medium speed, until well blended.

3. Add melted chocolate in gradually, while continuing to beat with mixer.

4. Stir in cherries and nuts.

5. Spread fudge mixture into greased 9 x 9” baking pan.

6. Chill several hours.

Cooling
Allow the fudge to cool undisturbed to 110 F., after reaching the soft ball stage. When it reaches 110 F, the fudge is ready for constant and vigorous mixing. As the fudge stiffens slightly, add other ingredients such as nuts and candies.

Thermometer
Clip your candy thermometer to the side of the cooking pan. Make sure the thermometer does not touch the bottom of the pan and that the bulb at the end is fully submerged in liquid.
