Fudge Frosting

Frosting prepared from melted baking chocolate mixed with whole milk, white sugar, salt, light corn syrup, unsalted butter, and vanilla extract.

Ingredients -
4 Squares Unsweetened Baking Chocolate
1-1/3 cups Whole Milk
4 cups White Sugar
1/2 teaspoon Salt
2 tablespoons Light Corn Syrup
2 tablespoons Unsalted Butter
1 teaspoon Vanilla Extract
 
Preparation:

1. Place unsweetened baking chocolate and whole milk into a sauce pan and stir over very low heat until chocolate is melted.

2. Stir in white sugar, salt and light corn syrup, stirring until sugars have melted.

3. Increase heat to medium high and bring to a boil. Cover and boil for 3 minutes.

4. Uncover and cook until a little will form a soft ball when dropped into cold water.

5. Remove from heat, stir in unsalted butter and vanilla extract. Allow to cool.

6. When lukewarm, beat until mixture is creamy and thick enough to spread.

7. Makes frosting for 1-1/2 layer cakes.

Egg whites whipped to stiff peaks provide leavening when folded into batter. To maximize volume from beaten whites whip slowly at first and then increase speed to develop bulk and mass. Egg whites should not look grainy when whipped, always smooth and satin-like.

Lumps in Baking Soda

Baking soda can get lumpy. Always sift out the lumps before measuring. Measure baking soda exactly by overfilling the measuring spoon and swiping off excess with a straight edge.
